STUFFED PEPPERS WITH QUINOA AND WALNUTS



Today I Made:
STUFFED RED PEPPERS WITH QUINOA AND WALNUTS for DINNER.
Original recipe from EVERYDAY FOOD MAGAZINE.
(Can't remember which issue.)

Red bell peppers stuffed with quinoa, walnuts, cilantro, and a few spices. Topped with bread crumbs and olive oil. 
Baked for 1 hour and 15 minutes.

Simple.
Full of flavor.
A new family favorite.

I highly recommend serving any stuffed pepper recipe in a bowl.
It makes it so much easier to eat.

Looks delicious and, ever since I discovered quinoa a year or so ago, I can't get enough!

WOW this looks SO good! I'm always trying to find new ways to eat quinoa and this looks like a winner!
