PEANUT BUTTER AND JELLY COOKIES

This week I Made:
PEANUT BUTTER AND JELLY COOKIES for DESSERT.
These are cookies are AMAZING.
They are super easy to make and really do taste like a PB & J.

Perfect for cookie swaps, tea parties, or just to satisfy a craving.

I'm not much of a cookie person, but these are out of this world.
I can't wait to make them again.
Unfortunately, my husband is getting his upper wisdom teeth extracted tomorrow afternoon, so I'm going to have to wait until he recovers.
Poor me, I mean, poor him.

HOMESTYLE CHOCOLATE CHIP COOKIES

Last Friday I Made:
HOMESTYLE CHOCOLATE CHIP COOKIES for DESSERT.

I'm not much of a cookie fan, but after seeing Legally Vegan's: Chocolate Chip Cookie post, I started craving them.
I doubled the recipe and decided to make them into GIANT size cookies.
I placed 4 giant sized spoonfuls onto the cookie sheet and once out of the oven, they had turned into 1 gigantic cookie.
My first instinct was to throw them away, but I ended up cuting it into 4 pieces.

So for the rest of the batter, I made them into normal size cookies and they turned out fine, a little too greasy for my taste, but husband loved them.

If you have a well stocked pantry, you will have no problem making these on a whim.

WALNUT AND BROWN-SUGAR RUGELACH

Today I Made:
WALNUT AND BROWN-SUGAR RUGELACH for DESSERT.
Recipe from EVERYDAY FOOD MAGAZINE, Dec. 2007 issue.
I veganized it by using Earth Balance, vegan cream cheese, and soy milk.

Tasty, small morsels of walnuts, brown sugar, and perfectly browned dough.
Although we loved the end result, the dough was super hard to work with.
It kept falling apart, even after refrigerating it for more than 2 hours.
I blame it on the Earth Balance and vegan cream cheese in the dough.

I definitely will be making rugelach again, but I will using the vegan version found in The Joy of Vegan Baking Cookbook by Colleen Patrick-Goudreau.
