PINTO BEAN BURGERS AND QUINOA, ZUCCHINI, AND CORN MEDLEY


Yesterday I Made:
I've made this awesome burger many times and even posted it here.
It's still my all time favorite homemade patty.
It's spicy and just plain delicious.

I wanted to have a side dish that was fresh and healthy.
So, I decided on a tasty quinoa salad.
This recipe is different because it calls for raw zucchini,which we've never eaten raw.
It also contains green onions, corn, cilantro pine nuts, and an added surprise, HAZELNUTS!
The salad was dressed with a light orange, lemon dressing.

SPICY BLACK BEAN BURGERS

Yesterday I Made:
SPICY BLACK BEAN BURGERS for DINNER.
Black beans, corn, red bell peppers, jalapenos, and onions formed into a patty and smothered with red salsa along with sliced avocado, red onion, romaine lettuce on a toasted whole wheat bun.
Instead of french fries, I made the famous KALE CHIPS with ketchup.

This is one of the BEST patties I've ever made!
Perfectly spicy and texture.

SWEET POTATO-PECAN BURGERS WITH CARAMELIZED ONIONS

Yesterday I Made:
SWEET POTATO-PECAN BURGERS WITH CARAMELIZED ONIONS for DINNER.
Sweet potato, regular oats, and pecans formed into patties, served on a bed of baby greens and smothered with chipotle chili sauce, then topped with caramelized onions on a whole wheat bun.

Delicious, but so difficult to make.
The precooked mix is was too soft to form into patties.
I ended up having to add bread crumbs into the mix to be able to form the patties.
Then I refrigerated them for 2 hours before cooking.

SOUTHWESTERN PINTO BEAN BURGERS WITH CHIPOTLE MAYONNAISE


Today I Made:
SOUTHWESTERN PINTO BEAN BURGERS WITH CHIPOTLE MAYONNAISE and BAKED SWEET POTATO FRIES for DINNER.
Pinto beans, corn, onions, cilantro, jalapeno patties on a whole wheat bun.
Then smothered with a tangy and spicy chipotle VEGENAISE (instead of mayonnaise).

All we can say is:
WOW!!!
This was by far the best burger EVER!!!

Perfectly spicy.
Flavors just melt in your mouth.
This will definitely be my go-to veggie burger recipe.

The sweet potato fries were satisfying, but they could use some work.
Pretty simple recipe:
sweet potatoes (cut into thick strips)
olive oil
salt
pepper

Bake on a preheated 375 degree oven for 30 minutes.
Then flip over and bake another 15-20 minutes or until medium brown.
They came out a little too soft for my taste.
I was hoping they would turn out crispy.
But I guess you have to fry them to get them crispy.

GREEK-STYLE QUINOA BURGERS

Today I Made:
GREEK-STYLE QUINOA BURGERS for DINNER.
Recipe from Body+Soul Magazine.
Quinoa, carrots, green onions, navy beans, and spices.
Then topped with a tangy, spicy yogurt sauce and cucumbers and stuffed into a whole wheat pita.
Another simple yet satisfying meal.
This meal will surely be made over and over again.
