AFRICAN PEANUT SOUP

Today I Made:
AFRICAN PEANUT SOUP for DINNER.
Diced tomatoes, tomato paste, peanut butter, garlic, cayenne pepper, brown rice, vegetable broth, spices and topped with more brown rice and green onions.
This is a great example of a panty inspired dish that happens to be one of my husband's favorite soups.
I highly recommend trying this recipe.
I've been making it for years and every time I take my first spoonful, I always wonder why I don't make it more often.

Oh yeah! I have all of that stuff! My friend had me over for dinner and made this recipe once, it was so good... but I totally forgot about it! Thanks for the link!

I love this soup. there are so many variations, but it is always fantastic.

plus it freezes well.

The recipe I use from Voluptuous vegan, also has turnip, yams, roasted cauliflower and squash. oh and tons of ginger.
