BAKED MACARONI AND CHEESE

Recipe from VegNews magazine Jan./Feb. 2008 issue.
Finally a vegan Mac & Cheese that doesn't call for tofu.
All I can say is "WOW!"
This is by far the BEST Mac & Cheese ever!!!

EGG-FREE CHOCOLATE-BANANA LOAF


Today I Made:
EGG-FREE CHOCOLATE-BANANA LOAF for DESSERT.
Recipe from VEGETARIAN TIMES MARCH 2008 issue.
I substituted the buttermilk with plain soymilk mixed with 1 tsp. apple cider vinegar.
So fast and easy to make.
And it's delicious.

For DINNER tonight I made the CRISPY SWEET AND SOUR TOFU from the April 15 post.
It's actually the 3rd. time I make it.
Can't get enough of it.

Both recipes were super fast to make and so incredibly tasty.
Another perfect meal for a HOT Los Angeles day.

PUMPKIN CINNAMON ROLLS

Today I Made:
PUMPKIN CINNAMON ROLLS for DESSERT.
It takes time and patience to make these. 
But once they come out of the oven, you just want to gobble them up.
This is the fourth time I make these and we can't get enough!

CHOCOLATE CREAM PIE

Today I Made:
CHOCOLATE CREAM PIE for DESSERT.
Recipe from JAN/FEB issue of VEGNEWS magazine.
Recipe called for CACAO NIBS, which I've never used before.
The crust was RAW and  made out of the cacao nibs, dates and pecans.
The filling was creamy and pudding-like.

Overall the pie was a success.
Full of chocolate flavor.
And I'm happy that I got to try cacao nibs and the RAW crust.

CHOCOLATE-CHOCOLATE CHIP PANCAKES for BREAKFAST.
Recipe from VEGAN WITH A VENGEANCE by ISA CHANDRA MOSKOWITZ.

Pancakes topped with SOYATOO SOY WHIP.
Found it at WHOLE FOODS in the refrigerated aisle.
While I made the pancakes, I whipped the SOYATOO for 10 minutes until fluffy.

Works better than the canned version.
And it tastes great!

Pineapple+Strawberries+Kiwi+Blackberries+Agave Syrup+unsweetened coconut flakes+pecans= Perfectly sweet and Refreshing salad.

Green Smoothie:
4 Kale leaves+3 Pineapple spears+2 Bananas+2 cups water=Delicious and highly nutritious!

This TOFU isn't good...it's GRRRRRRRRRRRRREAT!!!

RAINBOW SLAW



Today I Made:
RAINBOW SLAW AND GARBANZO SPREAD PITAS for DINNER.
The slaw was perfectly sweet and spicy.

For the pitas,I used leftover spread, salad, and red onions from today's lunch.
I also added cucumber for texture.

This dinner was out of this world.
Tons of flavors and textures.
We loved every single bite.

PERFECT SANDWICH

Today I Made:
The BEST GARBANZO SPREAD SANDWICH EVER, for LUNCH.
Garbanzo spread+lime marinated red onions+greens with ASIAN MIRACLE DRESSING+thinly sliced tomatoes+whole grain bread=PURE DELICIOUSNESS!!!

It was a SCORCHING 95 degrees in Los Angeles today.
Sandwich and Salad weather.

BRUSCHETTA AND SMASHED PEA & BARLEY SOUP




Today I Made:
BRUSCHETTA AND SMASHED PEA & BARLEY SOUP for DINNER.
The bruschetta recipe is a copycat recipe from CHEESECAKE FACTORY.
Chopped tomatoes and red onions, minced  garlic, chopped basil, olive oil, red wine vinegar, salt and pepper.
I served it with toasted garlic baguette.
Simple and refreshing.

The soup is also a copycat from CALIFORNIA PIZZA KITCHEN.
Also one of our favorite soups.

STIR-FRY WITH PEANUT DRESSING

Today I Made:
STIR-FRY WITH PEANUT DRESSING AND BROWN RICE for DINNER.
Whenever I have leftover vegetables, I always make a stir-fry seasoned with olive oil, red chili pepper flakes, garlic, salt and pepper.
But this time I tried VEGANYUMYUM'S peanut dressing.
The sauce was smooth and perfectly spicy.
Just plain goodness.

PUMPKIN DOUGHNUTS


Today I Made:
PUMPKIN DOUGHNUTS for DESSERT.
I baked them using the doughnut pan pictured above.
This is the second time I make BAKED doughnuts.
But this time I accidently poured too much batter, so the tops look like muffins and the bottoms like doughtnuts.

We've been eating this salad everyday either for lunch or dinner for the past 2 weeks.
Can't get tired of it.
I'm still using the ASIAN MIRACLE DRESSING from VEGAN LUNCH BOX by JENNIFER MCCANN.

RATATOUILLE



Today I Made:
RATATOUILLE WITH GARLIC POTATOES for DINNER.
Obviously inspired by the movie RATATOUILLE.
Recipe from SMITTEN KITCHEN.
The top picture is before baking.

This dish is so colorful and tasty.

The garlic mashed potatoes are supper simple to make.
Wash and peel as 4 large baking potatoes.
Cut into 2 inch cubes and place in a large pot, cover with water.
Add 2 whole, peeled garlic cloves.
Cook 20 minutes or until tender.
Drain and add back to pot.
Add 1/4cup of plain soymilk,2 tablespoons of Earth Balance, salt and pepper to taste.
Whisk until smooth.

ZUCCHINI MUSHROOM PIZZA and SALAD for DINNER.
First time using an iron skillet to cook the pizza.
I lightly oiled the skillet then I added the pizza dough.
The pizza came out crispy and golden brown.
I loved it!
Give it a try.

STUFFED TWICE-BAKED POTATOES WITH SESAME GREEN BEANS for DINNER.
Both recipes from YELLOW ROSE RECIPES by JOANNA VAUGHT.

PESTO PASTA


Yesterday I Made:
PESTO PASTA  AND SALAD for DINNER.
Pesto is one of the EASIEST sauces you can ever make.
3 cups BASIL+3 cloves of GARLIC+ 3 T walnuts+3 almonds+salt+olive oil(enough to bind the sauce)
Add basil thru salt in a food processor and process until fine.
Without turning it off, slowly add the olive oil until smooth and creamy.
Add to pasta or pizza!
Husband gave this dinner a 10!!!
