BANANA AND BLACK BEAN EMPANADAS


Today I Made:
BANANA AND BLACK BEAN EMPANADAS for DINNER.
Recipe from VEGETARIAN TIMES MARCH 2009 issue.
Whole wheat dough filled with black beans, onions, bananas, and spices.
Baked until golden brown.
Served with homemade GUACAMOLE.

Empanadas are the Latin-American version of calzones.
I've seen them stuffed with pumpkin, pineapple, and meat ( dead animal flesh ) of course.

This version was amazing.
The stuffing was both sweet from the bananas and spicy from the chili powder.

My only recommendation is to make a salsa or guacamole like I did.
Because the empanadas are little too dry on there own.

I'm definitely going to try making these again with different stuffings.
The possibilities are endless.

Mmmm, these look good. I used to get banana-cheese enchiladas with mole sauce at a restaurant - maybe these would make a good substitute!

Those look awesome! I've had a banana/black bean quesadilla in the past that was really good, they pair together well. Now I wish my subscription to VT hadn't run out!

Which recipe did you have problems with? If it was Dreena's, I have no idea what could have gone wrong. I'm sorry you had trouble with it though. Dreena did film a video on how to make those cookies that's up on Everyday Dish (Julie Hasson's website). Maybe you could watch that just to be sure you did everything right.

Cool recipe! I would have never thought to use bananas, rather plaintains, but now that I think about it, why not? And bananas are easier to find. Yum!
