RATATOUILLE



Today I Made:
RATATOUILLE WITH GARLIC POTATOES for DINNER.
Obviously inspired by the movie RATATOUILLE.
Recipe from SMITTEN KITCHEN.
The top picture is before baking.

This dish is so colorful and tasty.

The garlic mashed potatoes are supper simple to make.
Wash and peel as 4 large baking potatoes.
Cut into 2 inch cubes and place in a large pot, cover with water.
Add 2 whole, peeled garlic cloves.
Cook 20 minutes or until tender.
Drain and add back to pot.
Add 1/4cup of plain soymilk,2 tablespoons of Earth Balance, salt and pepper to taste.
Whisk until smooth.

Looks very tasty! and the mashed potatoes is a very nice addition. Ratatouille is also one of my favorite movies. :-)
