Enchiladas stuffed with mashes potatoes, kale, pumpkin seeds, lime juice, and spices.
Topped with a SPICY roasted chile sauce.
With a side off millet, flavored with tomatoes and jalapenos.
(first time trying millet...soft and crunchy at the same time)
Two GREAT, MEMORABLE dishes.
Can't wait for leftovers tomorrow!!!

I really like those enchiladas though I always add a little something more to the filling. Now I'll have to try the millet!
