MOLE SKILLET

Today I Made:
MOLE SKILLET for DINNER.
Recipe from VEGANOMICON.
Bean, spinach, carrots, onions, and mole sauce.
Topped with a very moist (almost cake-like) cornbread.
With more mole sauce poured on top.
(Obviously the mole sauce wasn't very authentic.)

I guess I'm not very impressed with this recipe.
I don't think I will be making this again.
It lacked flavor and it tasted like it was missing something.

I made this not so long ago, and I wasn't really impressed either. However, we made the Baked Pumpkin Ziti Saturday night and it might be my new favorite recipe out of Vcon. Highly recommended!

That's good to know. I love almost all the recipes I try, but some are just "eh". I don't really like the Mac Daddy either, but I think that's because I have two other mac recipes that I've been in love with for years.
