Today I Made:
POBLANOS STUFFED WITH CUMIN AND ORANGE-SCENTED RICE AND A MIXED GREEN SALAD for DINNER.
The poblano dish is another recipe from VEGAN PLANET.
Poblanos stuffed with brown rice, onions, carrots, oranges, orange zest, and spices.
I topped them with Tofutti sour cream and pomegranate seeds.
This dish was not as impressive as I thought it was going to be.
It sort of tasted a little bland.
I think the addition of the oranges and the fact that the rice blend was a little dry, didn't help it either.
Overall you could say that it is pretty forgettable.

On the upside, the salad was amazing.
I used a mixed green salad blend, julienned  jicama, red onion, pomegranate seeds, and our favorite, ASIAN MIRACLE DRESSING.
Those little pomegranate seeds made this salad special.
Wish they were around year round.

Well, if it's any consolation the picture of the stuffed poblano is not forgettable!

I think that stuffed peppers recipe sounds great. I love Vegan Planet, but have noticed that sometimes the recipes sound great, but turn out bland. Some of the recipes in that book are absolute hits, though (pesto stuffed tofu steaks - try them!). Anyway, sorry this didn't work out because it really does sound delicious!

I love the stuffed poblanos, so I had to chime in. Maybe you needed to add more salt and pepper? I usually add a good 1/2 teaspoon of salt and 1/4 teaspoon of pepper.(I know "to taste" means something different to everyone!) Sometimes, I add a little cayenne or minced chipotles to add a little heat. I also add some cilantro and a pinch of sugar if my oranges aren't sweet. A nice moist rice is best for the stuffing. Hope these tips are helpful. The poblano photo is great, by the way!
